Succulent shrimp baked in a flavorful tomato sauce with herbs and tangy feta cheese.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 14.5-ounce cans of diced tomatoes
  • 1/4 cup minced fresh parsley
  • 1 tablespoon minced fresh dill or 1 teaspoon dried dill
  • 1 to 1 1/4 pounds medium sized raw shrimp, peeled and deveined (can leave tails on), thaw if frozen
  • Pinch salt, more to taste
  • Pinch black pepper, more to taste
  • 3 ounces feta cheese (about 2/3 cup, crumbled)
Instructions:
  • Preheat your oven to a toasty 425°F.
  • Start by generously coating the bottom of a large oven-proof skillet with oil and heating it over medium-high heat. Sauté the onions until softened for 3-5 minutes. Then, add the garlic and cook until fragrant, approximately 30 seconds.
  • Combine tomatoes, simmer: Combine the tomatoes and simmer gently until the juices thicken, about 5-10 minutes.
  • Combine feta, shrimp, herbs, and season with salt and pepper. Bake uncovered until shrimp are cooked, about 10-12 minutes. Serve hot with crusty bread, pasta, or rice.
