Easy baked spaghetti casserole: Layer spaghetti with sausage and mushroom tomato sauce, ricotta, Parmesan, and mozzarella cheese. Bake until gooey and delicious!
Ingredients:
  • 3/4 pound vermicelli pasta or thin spaghetti
  • 1 pound bulk sweet Italian sausage (removed from casings)
  • 1/4 pound shiitake or cremini mushrooms, roughly chopped
  • 1 medium onion, chopped, about 1 1/2 cups
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 3 cups (24 ounces) marinara or meatless tomato sauce, homemade or store bought
  • 1 1/2 cups water
  • 1 tablespoon Italian seasoning
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon extra virgin olive oil, plus more for greasing the casserole dish
  • 1 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 cup ricotta cheese
  • 2 to 3 cups shredded mozzarella cheese
Instructions:
  • Place a large pot on high heat and add 2 tablespoons of salt to 4 quarts of water. Proceed with the recipe while the water heats up for the pasta.
  • Brown the sausage: Crumble the sausage into a large sauté pan over medium heat, breaking it into smaller pieces as it cooks to render the fat. Cook until no longer pink, then remove with a slotted spoon and discard the fat responsibly.
  • Sauté the onions, mushrooms, and spices: Cook chopped onions and mushrooms in a pan over medium-high heat until onions are translucent and mushrooms release their liquid. Stir in minced garlic and red chili pepper flakes, cook for an additional minute.
  • Combine marinara sauce, 1 1/2 cups water, onions, mushrooms, sausage, Italian seasoning, and parsley in a pan. Bring to a gentle simmer over low heat. Let it simmer for 10-15 minutes while you prepare the pasta.
  • Boil the pasta until al dente, about 5 to 6 minutes. Drain and rinse under cold water.
  • Drizzle olive oil over the cooled pasta in a large bowl. Add Parmesan cheese, followed by 2 beaten eggs. Gently mix everything together using your clean hands for the best results.
  • Preheat your oven to 350°F. Coat the inside of a 9x13 inch casserole dish with olive oil.
  • Create delicious layers in the casserole dish: Begin with 1 cup of sauce spread evenly on the bottom. Add half of the pasta in a single layer, then generously top with half of the sauce.
  • Layer the cheeses step by step for a delicious finish: Begin by dotting the sauce with all of the ricotta cheese, then sprinkle half of the Mozzarella over the ricotta layer. Continue by layering with the remaining pasta, sauce, and mozzarella. Enjoy the rich flavors!
