Whisked eggs coat spinach, topped with cheese, breadcrumbs, milk, and melted butter. Bake for an hour. Perfect for any gathering.
Ingredients:
  • 1 cup milk
  • 1.25 pounds spinach
  • 0.25 cup all-purpose flour
  • 3 eggs, beaten
  • 0.75 cup shredded Cheddar cheese
  • 0.5 cup dried bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 0.25 cup butter, melted
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground black pepper
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 2 quart baking dish.
  • Thoroughly wash the spinach to remove any dirt. Squeeze out excess water. Chop the spinach. Layer the spinach and flour, then add beaten eggs halfway between the layers.
  • In a bowl, blend cheese and bread crumbs, adding parsley if preferred. Sprinkle the mixture over the spinach. In a separate bowl, combine butter or margarine, milk, salt, and pepper. Pour over the ingredients. Bake in a 350°F (175°C) oven for 50-60 minutes.
