Irresistibly creamy spinach artichoke dip, loaded with Parmesan, artichoke hearts, spinach, and red bell pepper. Perfect for any gathering.
Ingredients:
  • 1 cup mayonnaise or salad dressing
  • 1 cup freshly grated Parmesan cheese
  • 1 can (about 14 oz) artichoke hearts, drained and coarsely chopped
  • 1 box (9 oz) frozen chopped spinach, thawed and squeezed to drain
  • 1/2 cup chopped red bell pepper
  • 1/4 cup shredded Monterey Jack or mozzarella cheese
  • Toasted baguette slices or assorted crackers, if desired
Instructions:
  • Preheat oven to 350°F. Combine mayonnaise and Parmesan cheese, then fold in artichokes, spinach, and bell pepper.
  • Transfer the mixture into a 1-quart casserole dish and generously top it with Monterey Jack cheese.
  • Bake, covered, for around 20 minutes until the cheese is gooey and melted. Enjoy warm with slices of baguette.
