Savory pork roast calls for crispy, sweet-salty side dish.
Ingredients:
  • 9 small red apples
  • 50g butter, chopped
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tsp fresh thyme, chopped, plus extra, to serve
  • 125g pancetta or smoked bacon, finely chopped
  • 75g fresh breadcrumbs
Instructions:
  • - Preheat your oven to 190C/170C fan forced. - Core and finely chop one apple. Remove the tops from the rest of the apples and set them aside as lids. Core the apples and carefully create a hollow cavity inside each one. Place the apples in a small roasting pan.
  • In a frying pan over medium-low heat, melt half of the butter. Sauté onions, garlic, and thyme for 5 minutes until softened. Remove from heat and mix in pancetta, chopped apple, breadcrumbs, and season with salt and pepper. Let it cool.
  • Gently fill apples with stuffing and cover each with their tops. Dot with remaining butter and scatter any extra stuffing around. Roast covered for 30 minutes, then uncover and continue roasting until soft and golden, about 30 minutes. Finish with a sprinkle of extra thyme.
