Delicious baked apples stuffed with pecans, raisins, cinnamon, and sweet brown sugar. Comforting and simple dessert.
Ingredients:
  • 4 large good baking apples, such as Rome Beauty, Golden Delicious, or Jonagold
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup currants or chopped raisins
  • 1 tablespoon butter
  • 3/4 cup boiling water
Instructions:
  • Preheat the oven: Preheat to 375°F (190°C).
  • Prepare apples for stuffing. Rinse and dry them. Use a sharp paring knife or an apple corer to remove the cores, keeping the bottom 1/2 inch intact. For a knife, start by cutting out the stem and then use a small metal spoon to scoop out the seeds. Make the holes about an inch wide.
  • Prepare the stuffing: Combine brown sugar, cinnamon, currants or chopped raisins, and chopped pecans in a bowl. Fill each apple with the stuffing mixture. Top each apple with a quarter tablespoon of butter.
  • Achieve tenderness: Start by pouring boiling water into the baking dish. Bake at 375°F (190°C) for 30 to 45 minutes until the apples are tender yet firm.
