Baked apples stuffed with dates and cinnamon

Stuffed apples with port-infused dates in a luscious sticky sauce.
Ingredients:
  • 85g (1/2 cup) pitted dates, chopped
  • 40.00 ml port
  • Olive oil spray
  • 32.00 gm brown sugar
  • 40.00 ml pine nuts, lightly toasted
  • 1 tsp finely grated lemon rind
  • 1.25 gm ground cinnamon
  • 10.00 gm reduced-fat margarine
  • 4 medium Granny Smith apples, cored
  • 250ml (1 cup) apple juice
  • Low-fat vanilla yoghurt, to serve
Instructions:
  • In a bowl, mix the dates and port together. Let them sit for 3-4 hours to soak and enhance the flavors.
  • Preheat your oven to 180°C. Grease the base of a baking dish with oil. Mix together the dates, sugar, pine nuts, lemon zest, cinnamon, and margarine in a bowl.
  • Carefully score a shallow, horizontal cut around each apple with a sharp knife to keep the skin intact. Fill each apple center with the date mixture and pour apple juice around them in the dish.
  • Loosely cover the pan with foil and bake for 40 minutes, basting the apples occasionally with apple juice until tender. Serve with a dollop of yogurt.
