Indulge in baked apples filled with rich cheesecake, topped with fresh berries for a decadent treat.
Ingredients:
  • 8 red apples
  • 250g cream cheese, chopped, at room temperature
  • 55g (1/4 cup) caster sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 70g (1/4 cup) Greek-style yoghurt, plus extra, to serve
  • 60g (1/2 cup) frozen raspberries, plus extra, fresh, to serve
  • Honey, to serve
Instructions:
  • Preheat your oven to 180C (160C fan forced) and line a baking tray with parchment paper. Cut off the top 2cm of each apple, then carefully scoop out the insides using a spoon or a melon baller, making sure to leave a 1cm border. Place the hollowed-out apples on the lined tray.
  • Beat together cream cheese, sugar, and vanilla using electric beaters until smooth. Add the egg and beat until combined. Gently fold in the yogurt.
  • Evenly distribute the cheesecake mixture and frozen raspberries among the apples. Bake until the cheesecake is firm, around 30 minutes. Allow to cool for 10 minutes before serving.
  • Garnish with a generous spoonful of additional yogurt, a handful of ripe raspberries, and a luscious drizzle of honey.
