Indulge in our irresistible cheesecake-stuffed pancakes drizzled with strawberry sauce. Perfect for any time of day.
Ingredients:
  • 225.00 gm self-raising flour
  • 107.50 gm caster sugar
  • 321.88 gm milk
  • 250g cream cheese, softened
  • 1 tsp finely grated orange rind
  • 83.33 gm thickened cream
  • 86.63 gm orange juice
  • 250g strawberries, hulled, halved
  • 20g butter, melted
Instructions:
  • In a bowl, whisk together flour and half of the sugar, then create a well in the center. In a separate jug, whisk together milk and eggs. Pour the milk mixture into the flour mixture and whisk until smooth. Let the batter stand for 10 minutes.
  • Using an electric mixer, blend cream cheese, orange rind, and half of the remaining sugar until smooth. Mix in the cream until fully combined.
  • In a small saucepan over medium heat, mix orange juice and the rest of the sugar. Stir and cook for 4 minutes until the sugar dissolves. Bring it to a boil, then lower the heat and simmer for 2 to 3 minutes until slightly thickened. Remove from heat, add strawberries, toss, and set aside.
  • - Heat a large non-stick frying pan over medium heat. Brush with melted butter. - Drop 1 tablespoon of batter into the pan, then add another tablespoon to form an 8cm round pancake. - Spoon 1 tablespoon of cheesecake mixture onto the center of the pancake and top with another tablespoon of batter. - Cook for 2 to 3 minutes until bubbles form, then flip and cook for another 1 to 2 minutes until golden. - Transfer to a plate, cover loosely with foil to keep warm. - Repeat with remaining batter, cheesecake mixture, and butter to make 12 pancakes.
  • On each serving plate, delicately stack 3 fluffy pancakes. Generously dollop the velvety cheesecake mixture on top. Drizzle the vibrant strawberry mixture over the pancakes. Enjoy immediately.
