Baked apple with chorizo stuffing

Baked apples: impressive, simple, and ideal with pork.
Ingredients:
  • 4 Granny Smith apples
  • 1 shallot, finely chopped
  • 1 chorizo, finely chopped
  • 50g breadcrumbs
  • 20.00 ml sage, chopped
  • 2 tsp lemon rind, finely grated
  • 60g feta, crumbled
Instructions:
  • Preheat the oven to 200C. Cut off the tops of the apples about 3cm from the stem ends, and set them aside. Carefully core the apples, ensuring the bottoms remain intact.
  • In a medium frying pan over medium heat, heat the oil until shimmering. Sauté shallot and chorizo, stirring occasionally, for 5 minutes until the shallot is tender. Stir in breadcrumbs, sage, and lemon rind, cooking for an additional minute until fully combined.
  • Arrange apples cut side up in a baking dish. Stuff with chorizo mixture and sprinkle with feta. Cover with tops, pour 1/2 cup water into dish, cover with foil, and bake for 30-35 mins until apples are tender.
