Baked apple fritters with a broiled vanilla glaze for a perfect soft and crunchy treat without frying.
Ingredients:
  • 1 1/2 cup all-purpose flour, sifted
  • 1/2 cup packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • pinch of salt
  • 6 tablespoons unsalted butter, cold
  • 1/2 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped Honeycrisp apple
  • 1 cup confectioners’ sugar
  • 2 tablespoons whole milk
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
  • In a big bowl, mix all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Add butter and use a pastry blender to blend until the mixture looks like coarse crumbs.
  • In a cup, blend milk, egg, and vanilla extract with a whisk. Gently fold into flour mixture until just combined; mix in chopped apple. Using a scoop or spoon, place 1/4-cup portions onto prepared baking sheet.
  • Bake in the preheated oven for 11 to 12 minutes until a skewer inserted near the center of the fritter comes out clean. Then, transfer to a wire rack.
  • Preheat the broiler in your oven. Mix confectioner's sugar, milk, and vanilla extract together. Drizzle the glaze over the fritters and broil until golden.
  • Place the fritters under the broiler until the glaze is bubbly, which should take around 2 minutes.
