Delicious apple fritter loaf using canned apples, topped with sweet icing.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 125g butter, softened
  • 107.50 gm raw caster sugar
  • 200ml thickened cream
  • 1 egg, lightly beaten
  • 1/2 x 400g can pie apples
  • 2.50 gm powdered cinnamon
  • 150g (1 cup) icing sugar
  • 1 tsp vanilla paste
  • 41.20 gm milk
Instructions:
  • Preheat your oven to 190C/170C fan forced. Prepare your 20cm x 10cm loaf pan by greasing and lining it with baking paper, leaving enough paper to hang over all sides.
  • In a large bowl, combine flour and butter using your fingertips. Mix in 1/4 cup caster sugar, cream, and egg. Use a flat-bladed knife to cut and blend the ingredients into a wet dough.
  • Mix together the apple, cinnamon, and remaining caster sugar in a separate bowl. Gently fold the mixture into the dough until just combined.
  • Transfer the prepared mixture into the pan. Bake for 60 to 65 minutes until golden. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • In a bowl, mix icing sugar, vanilla, and milk. Drizzle the icing over the cake. Allow the icing to set before serving.
