Indulge in a cozy fall treat with this apple fritter loaf featuring a delicious homemade glaze. Transform it into muffins for a versatile twist!
Ingredients:
  • nonstick cooking spray
  • 2 medium apples - peeled, cored, and chopped
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon, divided
  • 0.33333334326744 cup brown sugar
  • 0.66666668653488 cup white sugar
  • 1.5 cups all-purpose flour
  • 1.75 teaspoons baking powder
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1.5 teaspoons vanilla extract, or more to taste
  • 0.5 cup milk
  • 0.5 cup confectioners' sugar
  • 1 tablespoon milk, or more as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 9x5-inch loaf pan with cooking spray.
  • In a bowl, toss apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon until well coated. In a separate bowl, combine brown sugar and the remaining cinnamon. In another bowl, whisk together flour and baking powder. Keep them aside.
  • In a medium bowl, use an electric mixer to blend together the remaining white sugar and butter until smooth and creamy. Gradually beat in the eggs one at a time until well combined. Mix in the vanilla extract. Stir in the flour mixture until smooth, then add the milk and continue mixing until smooth.
  • Pour half of the batter into the loaf pan, layer half of the apple mixture on top, press gently, sprinkle half of the brown sugar mix. Repeat layers with remaining batter, apples, and brown sugar. Press apples lightly into the top.
  • Bake in the preheated oven for 1 hour and 15 minutes or until a toothpick inserted into the center comes out clean. Cool for 20 minutes before serving.
  • As the loaf cools, whisk confectioners' sugar in a bowl, gradually mixing in milk. Stir until fully combined, adding more milk for a thinner glaze. Drizzle over the cooled loaf.
