Indulge in Chef John's delicious apple fritter pancakes with warm maple syrup - a perfect breakfast treat!
Ingredients:
  • 1 large egg
  • 1 tablespoon white sugar
  • 0.125 teaspoon ground cinnamon, or to taste
  • 1 pinch ground ginger
  • 1 pinch nutmeg
  • 0.25 teaspoon kosher salt
  • 0.125 teaspoon pure vanilla extract
  • 1 cup shredded apple
  • 1 teaspoon lemon juice
  • 0.5 cup all-purpose flour, or as needed
  • 0.25 teaspoon baking powder
  • 0.125 teaspoon baking soda
  • 2 tablespoons melted butter
Instructions:
  • Assemble all the ingredients.
  • In a bowl, whisk together egg, sugar, cinnamon, ginger, nutmeg, kosher salt, and vanilla extract until foamy. Gently fold in shredded apple and lemon juice with a spatula. Stir in flour, baking powder, and baking soda until batter is thick but spoonable.
  • In a skillet over medium heat, melt butter. Spoon apple batter into the skillet and cook until browned, approximately 3 minutes. Flip and cook for another 3 minutes until apple pancakes are springy to the touch and browned on both sides.
