Ingredients:
  • 1 large sweet potato
  • 1 teaspoon olive oil
  • 0.5 sweet onion, sliced
  • 1 red bell pepper, cut into strips
  • 1 roasted green chile pepper, chopped
  • 0.25 cup vegetarian ground beef
  • 0.25 cup plain yogurt
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Arrange the sweet potato on a baking sheet and bake for approximately 30 minutes until tender.
  • In a skillet over medium heat, sauté onion, red bell pepper, and chili pepper in olive oil until very tender, stirring occasionally for about 15 minutes.
  • Cook the vegetarian ground beef in the skillet until heated through, stirring occasionally, for about 5 minutes.
  • Cut the cooked sweet potato in half lengthwise, then generously top it with the skillet mixture. Finish it off with a dollop of yogurt and a sprinkle of salt and black pepper for extra flavor.
