Elevate your leftover turkey with a unique and flavorful twist.
Ingredients:
  • 1 pound ground turkey
  • 1 clove garlic, minced
  • 0.75 cup fresh bread crumbs
  • 0.5 cup finely diced onion
  • 3 tablespoons chopped, toasted pine nuts
  • 0.5 cup chopped fresh parsley
  • 1 teaspoon ground black pepper
  • 4 tablespoons olive oil
  • 1 (16 ounce) package ziti pasta
  • 1.5 cups mozzarella cheese, shredded
  • 1 cup grated Romano cheese
  • 6 cups tomato sauce
  • 1 pint part-skim ricotta cheese
Instructions:
  • Combine ground turkey, minced garlic, bread crumbs, diced onion, toasted pine nuts, chopped parsley, beaten egg, salt, and pepper in a bowl. Shape mixture into 1-inch meatballs.
  • Heat 2 tablespoons of oil in a large heavy skillet over moderately high heat until hot but not smoking. Cook half of the meatballs, shaking the skillet occasionally, until they are browned and cooked through, approximately 4 minutes. Transfer the cooked meatballs to a paper towel to drain, then repeat the process with the remaining meatballs in the same way using the remaining 2 tablespoons of oil.
  • Preheat the oven to 375 degrees F (190 degrees C) and grease a 3 to 4 quart gratin dish with oil.
  • Boil generously salted water in a large pot. Add the pasta and cook until perfectly al dente, approximately 8 minutes. Drain well.
  • Combine the mozzarella and Romano cheese in a small bowl.
  • Spread a layer of 1 1/2 cups tomato sauce and half the meatballs in the dish. Add half of the pasta on top. Then, spread half of the remaining sauce and cheese mixture over the pasta. Layer with the remaining meatballs, dollop ricotta on top of the meatballs, and spread the rest of the pasta over the ricotta. Finish by topping with the remaining sauce and cheese mixture. Bake in the middle of the oven for 30 to 35 minutes until golden. Allow it to rest for 10 minutes before serving.
