Ingredients:
  • 4 medium zucchini, halved lengthways, roughly chopped
  • 1 small red onion, halved, thinly sliced
  • 20.00 ml finely grated lemon rind
  • 65.63 gm lemon juice
  • 40.00 ml small fresh mint leaves
Instructions:
  • - Preheat the oven to 220°C/200°C fan-forced. - Combine zucchini, onion, lemon rind, lemon juice, and oil in a baking dish. Season with salt and pepper, then mix well. - Roast for 18 to 20 minutes until the zucchini is tender. - Finish by garnishing with fresh mint leaves before serving.
