Baked-Bottom Nanaimo Bars

Decadent Nanaimo bars with layers of chocolate, creamy vanilla pudding, and coconut atop a baked chocolate graham cracker crust.
Ingredients:
  • 0.5 cup unsalted butter at room temperature
  • 0.25 cup white sugar
  • 1 egg
  • 0.25 cup unsweetened cocoa powder
  • 1.25 cups graham cracker crumbs
  • 1 cup flaked coconut
  • 0.5 cup finely chopped almonds
  • 0.75 cup semisweet chocolate chips
  • 3 tablespoons butter
  • 1 (5.1 ounce) package instant vanilla pudding mix
  • 2.25 cups milk
  • 0.25 cup flaked coconut
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter an 8x8-inch square baking pan.
  • In a large mixing bowl, use an electric mixer to beat unsalted butter and sugar until creamy, about 1 minute. Add the egg and cocoa powder, beat until well mixed. Mix in graham cracker crumbs, 1 cup coconut, and almonds on low speed until fully combined. Press mixture into prepared baking pan.
  • Place in the oven that has been preheated for 12 minutes, then allow the crust to cool.
  • Gently melt chocolate chips and 3 tablespoons of butter in a saucepan over low heat until smooth. Remove from heat, cool briefly, and spread the chocolate over the crust. Chill while preparing the next layer.
  • Using an electric mixer, whip the pudding mix and milk in a bowl until thick and smooth, for about 2 minutes. Spread this luscious pudding over the chocolate layer, sprinkle with 1/4 cup coconut, cover loosely, and chill in the refrigerator until set for at least 1 hour.
