Decadent Pennsylvania Dutch Funny Cakes: A delightful pie crust filled with a luscious chocolate layer that magically sinks to the bottom when baked.
Ingredients:
  • 3 (9 inch) unbaked pie crusts
  • 1 cup white sugar
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup water
  • 1 teaspoon vanilla extract
  • 1.5 cups white sugar
  • 0.5 cup butter
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 2.5 cups all-purpose flour
Instructions:
  • In a saucepan, mix together 1 cup of sugar, cocoa, water, and 1 teaspoon of vanilla. Heat over medium-low heat until it reaches a simmer, being careful not to boil. Set aside.
  • Cream together butter and 1 1/2 cups sugar in a large bowl until smooth. Add eggs and mix well. Stir in milk and 1 teaspoon vanilla. In a separate bowl, combine flour and baking powder, then add to the creamed mixture. Divide the batter among the pastry shells. Top each pastry shell with 1/3 of the cocoa mixture.
  • Bake at 350°F (175°C) until cake is cooked through, about 25 to 35 minutes.
