Impress all your guests this holiday season with a hearty Pennsylvania Dutch potato and bread dressing that serves a crowd.
Ingredients:
  • 10 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 cups butter, divided
  • 3 onions, diced
  • 1 bunch celery, diced
  • 1.5 cups milk, divided
  • 3 tablespoons seasoned salt, divided
  • 1 (1 1/4 pound) loaf of white bread, torn into pieces, or as desired - divided
Instructions:
  • In a large pot, add the potato cubes and cover them with salted water. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer until tender for about 25 minutes. Drain and let them steam dry for a minute or two.
  • In a large skillet over medium heat, melt 1/2 cup of butter. Cook and stir the onions and celery until they are reduced and browned, approximately 30 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease two 9x13-inch glass baking dishes.
  • Add another 1/2 cup of butter to the stand mixer along with the cooked potatoes. Start the mixer on Low setting. While mixing, pour in 1 cup of milk, add 1 tablespoon of seasoned salt, and 4 slices of torn bread. Briefly mix, then pour in 1/2 cup of milk and 4 more bread slices. Mix again, then add 2 more bread slices.
  • Add the remaining 1/2 cup of butter, 1 tablespoon of seasoned salt, onions, celery, and butter from the skillet, along with 4 more slices of bread to the mixer bowl. Mix until well combined, then mix in 2 to 4 torn bread slices. Let the mixer run until the dressing reaches your preferred consistency.
  • Divide the dressing evenly between the prepared baking dishes. Arrange the remaining 1/2 cup of thinly sliced butter on top of the dressing. Sprinkle the remaining 1 tablespoon of seasoned salt evenly over both dishes. Cover each dish with aluminum foil.
  • Roast in the oven until the dressing turns golden brown, approximately 1 hour.
