Irresistible Brooklyn-style bakery pizza with crispy homemade dough, 2 cheeses, and simple tomato sauce.
Ingredients:
  • 1.25 cups warm water
  • 1 teaspoon active dry yeast
  • 3 cups bread flour
  • 1.5 teaspoons fine salt
  • 0.25 cup olive oil, divided
  • 1 (28 ounce) can plain crushed tomatoes
  • 1 (14 ounce) can pizza sauce (such as Don Peppino®)
  • 8 ounces low-moisture whole-milk mozzarella, very thinly sliced
  • 0.25 cup grated Pecorino Romano cheese
Instructions:
  • Prepare dough: In a small bowl, mix warm water with yeast and let it sit until the yeast softens and forms a creamy foam for about 5 minutes. In the bowl of a stand mixer fitted with a dough hook attachment, combine flour and salt. Add the yeast mixture and knead the dough until smooth for about 7 minutes.
  • Lightly coat a large bowl with olive oil. Form the dough into a tight ball and place it in the bowl, rotating to coat it with oil. Loosely cover the bowl with plastic wrap and allow the dough to rise until doubled in volume, approximately 30 minutes.
  • Prepare the sauce by combining crushed tomatoes and pizza sauce in a medium bowl until thoroughly mixed.
  • Generously coat a heavy-gauge rimmed 12x17-inch baking sheet with olive oil.
  • Spread the dough evenly in the baking sheet, then gently pierce it all over with a fork. Lay out the mozzarella slices, top with 1 cup of sauce, and sprinkle with Pecorino Romano cheese. Finish by drizzling with the remaining olive oil. Allow the pizza to rise in a warm spot for about 1 hour until it puffs up.
  • Preheat your oven to a piping hot 450 degrees F (230 degrees C).
  • Bake the pizza on the center rack in the preheated oven for 15 to 20 minutes until the edges are deeply browned but the top is not burnt. Allow it to cool in the pan for 5 minutes before slicing into squares.
