Bakery-Style Streusel Muffins

Elevate blueberry muffins with a delicious streusel topping for bakery-quality results.
Ingredients:
  • 3 tablespoons sugar
  • 1 1/2 teaspoons shortening
  • 1 box (16.9 oz) Betty Crocker™ Wild Blueberry Muffin & Quick Bread Mix
  • 1 cup water
  • 3 tablespoons vegetable oil
Instructions:
  • Preheat your oven to 425°F and line 12 regular-size muffin cups with paper baking cups or simply grease the bottoms of the cups.
  • Combine the sugar and flour in a small bowl. Use a pastry blender or fork to cut in the shortening until the mixture resembles fine crumbs. Set aside.
  • Rinse and set aside the drained blueberries. In a medium bowl, gently mix muffin mix, water, oil, and egg until just blended. Carefully fold in the blueberries. Divide the batter evenly among the muffin cups and top each with 1 1/2 teaspoons of the crumb mixture.
  • Bake until the muffins are golden brown around the edges, for 20-25 minutes.
