Prepare Dani Venn's rosewater and cinnamon panna cotta a day ahead for a fragrant and spiced dessert.
Ingredients:
  • 500ml pomegranate juice
  • 20.00g gelatine powder
  • 257.50 gm (250mls) full cream milk
  • 757.50 gm (750mls) thickened cream
  • 1 tsp vanilla bean
  • 57.20 gm honey
  • 2 tsp rosewater essence
  • 1 orange zest, finely grated
  • 112.50 gm sugar
  • 2 sticks cinnamon
  • Pistachios, roughly chopped
  • Pomegranate seeds (optional)
  • Fairy floss (optional)
Instructions:
  • Soak gelatine leaves in a bowl of cold water for 10 minutes until they become soft and ready to use in your delicious pomegranate jelly.
  • Warm pomegranate juice in a saucepan over low heat.
  • Once soft, take out from water, gently squeeze to remove excess liquid, and combine with warmed pomegranate juice. Whisk to dissolve gelatine completely. After straining the mixture, portion it into serving glasses, approximately 50ml per glass for 10 servings. Refrigerate until fully set.
  • Combine milk, cream, vanilla, honey, rosewater, orange zest, sugar, and cinnamon in a large saucepan over low – medium heat. Stir until sugar dissolves, then simmer. Remove from heat and let cinnamon infuse for 30 minutes.
  • Submerge gelatine leaves in a bowl of chilly water for 10 minutes to soften.
  • Take out the cinnamon from the saucepan and gently reheat the panna cotta until it is warm.
  • Once the gelatine has softened and the panna cotta mixture is warm, take the gelatine out of the water, gently squeeze out any excess liquid, and add it to the milk mixture. Whisk until the gelatine is fully dissolved. Then, remove the mixture from the heat and let it cool slightly by whisking it to remove excess heat. Be cautious not to pour the very hot panna cotta mixture onto the jelly to avoid any melting or color bleeding.
  • Layer 100mls of panna cotta mixture into the serving glasses for a beautiful presentation. Refrigerate overnight to set.
  • Top dish with a sprinkle of chopped pistachios, optional pomegranate seeds, and optional fairy floss before serving.
