Tilapia fillets with balsamic onions, peppers, and blue cheese for a sweet and savory flavor explosion.
Ingredients:
  • 1 tablespoon olive oil
  • 1 yellow onion, halved and sliced
  • 1 red bell pepper, chopped
  • 2 tablespoons balsamic vinegar
  • salt and pepper to taste
  • 2 (8 ounce) fillets tilapia fillets
  • 2 teaspoons olive oil
  • 1 cup crumbled blue cheese
  • 4 cups mixed salad greens
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium-high heat, warm up 1 tablespoon of flavorful olive oil. Sauté onion and red pepper until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Add a splash of balsamic vinegar to the vegetables, season with salt and pepper to taste.
  • Drizzle 2 teaspoons of olive oil over tilapia fillets and season with a dash of salt and pepper. Transfer fillets to a small baking dish and spread balsamic onion mixture on top, before evenly sprinkling blue cheese over the fish.
  • Cook the fish in the preheated oven until it easily flakes with a fork. Serve the cooked fish on a bed of fresh salad greens.
