Serve these spicy-sweet cherries with Christmas ham.
Ingredients:
  • 700g cherries, pitted
  • 90.00 gm firmly packed brown sugar
  • 82.50 ml currants
  • 62.50 ml balsamic vinegar
  • 1 cinnamon stick
  • carved leg ham, to serve
Instructions:
  • Combine cherries, sugar, currants, vinegar, and cinnamon in a saucepan over medium-low heat. Stir constantly for 10 minutes until sugar dissolves. Bring to a boil, then reduce heat and simmer uncovered for 35-40 minutes until thick. Remove cinnamon, transfer balsamic cherries to a warm sterilized jar, cool, seal, and refrigerate until serving.
  • Drizzle balsamic cherries generously over the ham before serving.
