Balsamic orange chicken

Tangy orange juice adds zesty sweetness to a tasty chicken dish perfect for family dinners.
Ingredients:
  • 4 large (about 600g) chicken thigh fillets, trimmed, halved
  • 1 orange, juiced
  • 80ml (1/3 cup) balsamic vinegar
  • 1 garlic clove, crushed
  • Salt & ground black pepper
  • Olive oil, for greasing
  • 1 225g loaf Mediterranean focaccia (Don Emilio's brand)
  • 1/2 butter lettuce, leaves separated, washed, dried
  • 2 Lebanese cucumbers, thinly sliced lengthways
Instructions:
  • In a large, shallow glass or ceramic dish, add the chicken. Mix together the orange juice, balsamic vinegar, and garlic. Season with salt and pepper. Pour the marinade over the chicken, ensuring it coats the chicken well. Cover and refrigerate for at least 15 minutes to marinate, or longer if desired.
  • Preheat your oven to 220°C. Brush a chargrill or barbecue with olive oil to lightly grease and preheat over medium-high heat.
  • Cook the chicken in the marinade, rotating occasionally, for 4-5 minutes on each side until fully cooked. Keep it warm. In the meantime, warm the focaccia in the oven for 5 minutes. Slice the focaccia. Plate the lettuce, cucumber, chicken, and sliced focaccia on serving plates and serve promptly.
