Baked salmon with a flavorful Swanson® Chicken Stock and orange-balsamic sauce.
Ingredients:
  • 8 salmon fillets, 3/4-inch thick
  • Ground black pepper
  • 3 tablespoons olive oil
  • 1.75 cups Swanson® Chicken Stock
  • 3 tablespoons balsamic vinegar
  • 1.5 tablespoons cornstarch
  • 1 tablespoon orange juice
  • 1 tablespoon packed brown sugar
  • 1 teaspoon grated orange zest
  • Orange slices
Instructions:
  • Season the salmon generously with freshly ground black pepper. Transfer it to a 2-quart shallow baking dish. Drizzle the salmon with a generous amount of olive oil. Bake at 350 degrees F for about 15 minutes, or until the salmon easily flakes with a fork test.
  • In a 2-quart saucepan over medium-high heat, bring the stock, vinegar, cornstarch, orange juice, brown sugar, and orange zest to a boil. Continue to cook and stir until the mixture thickens.
  • Present the salmon topped with the zesty citrus sauce and decorate with fresh orange slices.
