Citrus butter shrimp bruschetta: Toasted bread topped with zesty shrimp.
Ingredients:
  • 1/3 cup olive or vegetable oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 2 teaspoons grated lime peel
  • 24 uncooked peeled deveined medium shrimp, thawed if frozen and tails peeled
  • 3 tablespoons butter or margarine, softened
  • 1 tablespoon orange marmalade
  • 24 slices French baguette, 1/4 inch thick
  • Cilantro sprigs
Instructions:
  • Combine oil, lemon juice, honey, lime peel, and salt in a medium bowl. Add shrimp and toss well to ensure they are coated. Cover and refrigerate for at least 30 minutes, but no longer than 2 hours, stirring once halfway through.
  • Preheat the oven to broil. Mix butter and marmalade in a small bowl until well combined. Spread the mixture over the baguette slices.
  • Take out the shrimp from the marinade and discard the marinade. Place the shrimp in a single layer on a rack in a broiler pan. Broil the shrimp with the tops 4 to 6 inches away from the heat for 4 to 6 minutes until they are lightly browned.
  • Top each baguette slice with a succulent shrimp and finish with a sprinkle of fresh cilantro for a burst of flavor.
