Whip up a zesty seafood ceviche with scallops, shrimp, and tilapia marinated in fresh citrus juice and veggies.
Ingredients:
  • 0.5 pound scallops, cut into small chunks
  • 0.5 pound shrimp, cut into small chunks
  • 0.5 pound tilapia, cut into small chunks
  • 2 medium lemons, juiced
  • 2 medium limes, juiced
  • 1 medium orange, juiced
  • 1 medium serrano pepper, diced
  • 1 medium avocado, diced
  • 1 medium tomato, seeded and diced
  • 0.5 medium cucumber, peeled and diced
  • 0.5 medium red onion, diced
  • 0.125 cup chopped fresh cilantro
  • 0.25 cup tomato and clam juice cocktail
  • 2 tablespoons white wine vinegar
  • 1 teaspoon lemon-pepper seasoning
  • 0.5 teaspoon Worcestershire sauce
  • 0.25 teaspoon ground white pepper
Instructions:
  • In a large bowl, mix scallops, shrimp, tilapia, lemon juice, lime juice, orange juice, and serrano pepper. Cover and chill for 1 hour, stirring occasionally.
  • In a medium bowl, toss together ripe avocado, juicy tomato, crunchy cucumber, zesty red onion, fresh cilantro, and aromatic garlic.
  • Combine tomato and clam juice, vinegar, salt, lemon-pepper seasoning, Worcestershire sauce, and white pepper in a small bowl. Drizzle over avocado mixture and gently mix together.
  • Separate excess citrus juices from the seafood. Mix in the avocado-tomato juice mixture and gently combine. Chill for an additional 20 minutes before enjoying.
