Skinny Citrus Shrimp Tacos

Light and flavorful shrimp tacos with citrus-marinated shrimp, cucumber salsa, and Greek yogurt crema - a perfect summer meal! Pair with a margarita for a refreshing dining experience.
Ingredients:
  • 1/2 cup orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped jalapeño chiles
  • 1 clove garlic, finely chopped
  • 1 lb uncooked medium shrimp, peeled, deveined
  • 2 plum (Roma) tomatoes, seeded, chopped
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro leaves
  • 1/2 English (seedless) cucumber, cut in half lengthwise, thinly sliced (about 1 cup)
  • 1/4 teaspoon salt
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 2 tablespoons orange juice
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count), heated as directed on package
Instructions:
  • Combine shrimp and marinade ingredients in a convenient 1-gallon resealable bag. Seal the bag and chill in the refrigerator for 30 minutes.
  • In a medium bowl, combine all ingredients for the cucumber salsa fresca. In a separate small bowl, mix together the yogurt crema ingredients.
  • Prepare the shrimp by draining and discarding the marinade. Heat a 12-inch nonstick skillet over medium-high heat. Add the shrimp and cook for 3 to 4 minutes, stirring occasionally, until they turn pink. Drain again, if necessary. Serve the shrimp on tortillas, topped with cucumber salsa fresca, and a drizzle of yogurt crema.
