Double-Citrus Sautéed Chicken with Spinach: Packed with Vitamin C, low in sat fat and sodium. Enjoy a flavorful and nutritious meal that boosts your daily nutritional intake.
Ingredients:
  • 1 tablespoon canola oil
  • 4 skinless, boneless chicken breast halves (1 to 1 1/4 pounds total)
  • 3 cloves garlic, peeled and thinly sliced
  • 1 teaspoon finely shredded lime peel
  • 2 tablespoons lime juice
  • 2 teaspoons snipped fresh cilantro
  • 1/8 teaspoon crushed red pepper
  • 1 medium fresh navel orange
Instructions:
  • Heat oil in a large skillet over medium heat. Cook chicken and garlic for 8 to 10 minutes, turning chicken once, until chicken is fully cooked through (170°F).
  • In a small bowl, mix lime peel, lime juice, cilantro, and crushed red pepper. Set aside. Peel and coarsely chop the orange. Pour the lime juice mixture into the skillet, then place the chopped orange over the chicken. Cover and cook for 1 to 2 minutes until heated through.
  • Drizzle the pan juices over the chicken and garnish with chopped orange for a burst of flavor.
