Elevate any celebration with gourmet strawberries and wafers.
Ingredients:
  • 80ml balsamic vinegar
  • 70g brown sugar
  • 500g strawberry
  • Freshly ground black pepper
  • Mascarpone, to serve
  • 1 egg white
  • 55g caster sugar
  • 40.00 ml plain flour
  • 20g butter, melted
  • 40.00 ml flaked almonds
Instructions:
  • 1. Preheat the oven to 180°C. 2. Combine vinegar and brown sugar in a saucepan over low heat and stir for 2 minutes until the sugar dissolves. 3. Increase heat to medium-high and bring the mixture to a boil. 4. Cook for 3-4 minutes, stirring occasionally, until it is reduced by half. 5. Allow it to cool to room temperature before using.
  • Line 2 oven trays with baking paper and trace 6 discs on each sheet using a 7cm-diameter pastry cutter. Flip the paper over so the pencil marks are on the bottom.
  • Whisk egg white in a clean, dry bowl until stiff peaks form, then gently fold in sugar until combined. Add flour and butter, stirring until well mixed. Place spoonfuls onto discs and spread using pencil marks as a guide. Top with almonds before baking.
  • Bake each tray for 5-7 minutes until light golden. Remove from oven, lift wafers quickly, and drape over a rolling pin to cool and crisp. Repeat process for the remaining 3 batches of mixture.
  • Arrange the strawberries beautifully on plates. Drizzle with the balsamic mixture, sprinkle with freshly ground pepper, and serve alongside mascarpone and almond wafers for a delightful treat.
