Balsamic tomato and basil penne

Quick and easy summer pasta dish, ideal for busy evenings.
Ingredients:
  • 400g penne rigate
  • 1kg vine-ripened tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 75.08 gm extra virgin olive oil,
  • 62.50 ml balsamic vinegar
  • salt and pepper
  • 1 bunch fresh basil leaves, torn
Instructions:
  • In a large saucepan, cook 400g of penne in boiling water as per packet instructions until perfectly al dente. After draining well, return the penne to the pan.
  • Mix together 1kg of vine-ripened tomatoes (finely chopped), 1 small red onion (finely chopped), 1/3 cup of extra virgin olive oil, and 1/4 cup of balsamic vinegar. Season generously with salt and pepper.
  • Combine the tomato mixture with the pasta, adding 1 bunch of torn fresh basil leaves. Toss together until fully mixed. Serve the pasta right away for the best flavor.
