Elevate delicate sea scallops with a flavorful balsamic glaze for a crowd-pleasing dish.
Ingredients:
  • 12 large sea scallops
  • 0.25 teaspoon seafood seasoning (such as Old Bay®)
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon canola oil
  • 0.5 cup dry white wine
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh tarragon
Instructions:
  • Thoroughly pat scallops dry with a paper towel to remove excess moisture and ensure a perfect sear. Season both sides of the scallops lightly with a mixture of seafood seasoning, salt, and pepper.
  • In a large skillet over medium-high heat, warm butter and olive oil. Place scallops in the skillet, ensuring they are not too crowded. Sear until golden brown with a crispy crust forming, around 3 minutes per side. Cook in batches if needed to prevent steaming, and be mindful not to overcook. Transfer scallops from the skillet and cover to retain warmth.
  • Combine white wine, balsamic vinegar, and Dijon mustard in the skillet. Cook over medium heat, stirring constantly to deglaze the pan, until the glaze thickens slightly, about 3 to 4 minutes.
  • Transfer the scallops to a serving plate, generously drizzle the glaze over them, and finish by sprinkling with chopped tarragon for a burst of fresh flavor.
