Tangy balsamic-raspberry chicken: Juicy chicken breasts coated in raspberry preserves and balsamic vinegar.
Ingredients:
  • 1/2 cup raspberry preserves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon raspberry-flavored liqueur, if desired
  • 4 boneless skinless chicken breasts
  • 3 teaspoons dried thyme leaves
  • 1/2 teaspoon salt
  • 2 teaspoons olive oil
  • 1/2 cup chopped red onion
  • 1/4 cup fresh raspberries
Instructions:
  • Combine the preserves, vinegar, and liqueur in a small bowl; set aside.
  • Place each chicken breast between plastic wrap or wax paper and gently pound until 1/4 inch thick. Season both sides of the chicken with thyme, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Cook onion for about 3 minutes until softened, stirring frequently. Add chicken and cook for 8 to 10 minutes, flipping once, until no longer pink in the center. Transfer chicken to a plate and cover to keep warm.
  • Keep the onion in the skillet. Pour in the preserves mixture and cook for 1 to 2 minutes, stirring constantly until it thickens. Drizzle the sauce over the chicken and garnish with raspberries.
