Delicious banana, yogurt, and apple muffin slice - ideal mid-morning pick-me-up!
Ingredients:
  • 375.00 gm wholemeal self-raising flour
  • 250.00 ml plain flour
  • 7.50 gm ground cinnamon
  • 2.50 gm ground ginger
  • 168.75 gm maple syrup, plus 2 tbsp extra
  • 2 eggs, lightly beaten
  • 115.00 gm vegetable oil
  • 250.00 ml thick and creamy vanilla yoghurt
  • 257.50 gm milk
  • 2 large over-ripe bananas, mashed
  • 1 large granny smith apple, peeled, grated
  • 50.00 gm traditional rolled oats
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan. Line the pan with baking paper, making sure to leave a 2cm overhang on all sides for easy removal later.
  • In a large bowl, mix self-raising flour, plain flour, cinnamon, and ginger. Create a well in the center and add maple syrup, egg, oil, yoghurt, milk, banana, and apple. Stir until just combined. Transfer the mixture into the prepared pan, spread evenly. Top with oats and drizzle with extra maple syrup. Bake for 30-35 minutes until the top is golden and firm to the touch.
  • Allow the dish to cool for 10 minutes in the pan. Then invert it onto a wire rack lined with baking paper, ensuring the top is facing up. Let it cool completely before cutting it into 20 slices and serving.
