Whip up a quick and delightful Apple Banana Bread using overripe bananas and stray apples. Sweetened with honey cereal and yogurt for a moist and flavorful twist. Ready in just 10 minutes.
Ingredients:
  • 2 cups Fiber One™ Honey Clusters® cereal
  • 3/4 cup sugar
  • 1/4 cup canola or vegetable oil
  • 1 container (6 oz) Yoplait® Original 99% Fat Free apple crisp yogurt
  • 2 teaspoons vanilla
  • 1 egg
  • 1 cup mashed very ripe bananas (2 medium)
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced peeled apples
Instructions:
  • Preheat the oven to 350°F. Grease the bottom of a 9x5-inch loaf pan. Place cereal in a sealed plastic bag, crush with a rolling pin or meat mallet, or use a food processor for crushing.
  • In a large bowl, use an electric mixer to combine sugar and oil until well mixed. Then, on low speed, mix in yogurt, vanilla, and egg until smooth. Add bananas and continue mixing. Finally, beat in flour, baking soda, and salt until fully incorporated.
  • Gently fold in crushed cereal and diced apples until combined, then spread evenly in the pan.
  • Bake for 1 hour 10 minutes to 1 hour 20 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then transfer to a cooling rack. Let it cool completely for about 2 hours before slicing.
