Caramelised apple jar cakes

Create decadent jar cakes by stacking banana bread, caramelized apples, and cream layers.
Ingredients:
  • 125g unsalted butter
  • 75g brown sugar
  • 6 Jazz apples, cored, cut into thin wedges
  • 600ml Thickened Cream
  • 2 Jazz apples, extra, very thinly sliced
  • 2.50 gm mixed spice
  • 550g Banana Bread, crust removed, cut into 2cm pieces
  • Mint sprigs, to serve
Instructions:
  • Melt butter and sugar in a hot frying pan until sugar dissolves. Reduce syrup for 2 mins or until it thickens slightly. Add apple wedges and coat them in the caramel. Simmer on medium heat for 8 mins until apples are soft but still firm. Mix in 2 tablespoons of cream. Bring to a boil and let it cool. Keep aside 2 tablespoons of the caramel for later.
  • - Preheat your oven to 120°C while lining 2 baking trays with parchment paper. - Arrange the apple slices in a single layer on the trays. - Bake for approximately 1 hour until the slices are crisp and dry.
  • In a bowl, use an electric mixer to whip the remaining cream and mixed spice until stiff peaks form.
  • Layer half of the banana bread pieces in four 350ml serving jars. Add half of the caramel apple on top, followed by half of the cream mixture. Repeat the layering with the remaining banana bread, caramel apple, and cream. Finish by drizzling with reserved caramel and garnishing with mint sprigs and apple chips before serving.
