Caramelised apple and oat bars

Make irresistible caramelized apple bars with oats, quinoa flakes, and pepitas for a delicious and nutritious treat.
Ingredients:
  • 80ml (1/3 cup) maple syrup
  • 60ml (1/4 cup) melted coconut oil
  • 1 large (about 245g) pink lady apple, cored, finely chopped
  • 115g (1 1/4 cups) rolled oats
  • 15g (3/4 cup) puffed brown rice
  • 55g (1/2 cup) quinoa flakes
  • 45g (1/3 cup) whole pecans
  • 45g (1/4 cup) pepitas
  • 20.00 ml flaxseeds
  • 3.75 gm ground ginger
  • 2 eggs, lightly whisked
Instructions:
  • Preheat the oven to 180ºC (160ºC fan forced). Grease and line a 16 x 26cm slice pan with baking paper.
  • In a non-stick frying pan over medium heat, combine 1 tablespoon of maple syrup and 2 teaspoons of oil. Simmer for 1-2 minutes until slightly reduced. Add the apple and cook for 4 minutes, stirring occasionally, until caramelized. Transfer to a bowl and let it cool.
  • In a bowl, mix together oats, puffed rice, quinoa flakes, pecans, pepitas, flaxseeds, cinnamon, and ginger. Stir in the apple mixture. Create a well in the center and add the egg, remaining oil, and remaining maple syrup. Mix thoroughly. Transfer the mixture into the prepared pan. Bake for 28-30 minutes until golden and firm. Let it cool completely in the pan before cutting into 12 bars.
