Banana and coconut sambal

Try a soothing yogurt curry with banana and coconut to balance out the heat of spicy dishes.
Ingredients:
  • 1 ripe banana, peeled, halved lengthways,thinly sliced
  • 10.60 gm fresh lemon juice
  • 1 red onion, halved, finely chopped
  • 1 long fresh green chilli, halved, deseeded, finely chopped
  • 10.40 gm shredded coconut
  • 1 x 125g ctn 99.8 per cent fat-free traditional natural yoghurt (Dairy Farmers brand)
Instructions:
  • Combine the banana, lemon juice, onion, chilli, 1 tablespoon of shredded coconut, and yogurt in a serving bowl, stirring until fully mixed.
  • Top with the remaining shredded coconut for an irresistible finishing touch and enjoy right away.
