Indulge in a decadent winter dessert of caramelized bananas paired with warm coconut custard.
Ingredients:
  • 257.50 gm milk
  • 252.50 gm coconut milk
  • 4.40 gm vanilla essence
  • 6 egg yolks
  • 20.00 gm cornflour
  • Sesame snaps, roughly chopped (see note), to serve
  • 20.00 gm butter
  • 16.00 gm brown sugar
  • 4 bananas, sliced
Instructions:
  • Create delicious caramelised bananas by melting butter in a non-stick frying pan over medium-high heat. Stir in brown sugar until dissolved, then add bananas. Reduce heat to medium and cook for 2 to 3 minutes until warmed through. Cover to keep warm before serving.
  • In a saucepan over medium heat, combine milk, coconut milk, and vanilla. Stir constantly for 5 minutes until hot, being careful not to let it boil. Remove from heat.
  • Combine egg yolks, cornflour, and caster sugar in a heatproof bowl, mixing until smooth. Gradually pour hot milk mixture over the egg yolk mixture while whisking continuously.
  • Transfer the mixture back to the saucepan and simmer over low heat, stirring constantly, for 8 minutes until the custard thickens and can coat the back of a wooden spoon. Be careful not to let it boil to prevent curdling.
  • Ladle warm custard into bowls. Top with caramelized bananas and sprinkle with sesame snaps. Enjoy!
