Grilled banana and custard crumble

Indulge in a decadent banana crumble while savoring the sweet return of affordable bananas.
Ingredients:
  • 360.00 gm bought vanilla custard
  • 6 ripe bananas, thickly sliced diagonally
  • pouring cream, to serve
  • 33.00 gm rolled oats
  • 28.05 gm desiccated coconut
  • 165.00 ml plain flour, sifted
  • 90.00 gm brown sugar
  • 100g butter, chilled, chopped
Instructions:
  • Prepare the crumble topping by preheating the grill on medium. Spread oats and coconut on a baking tray and toast under the grill for 1 minute. Allow the mixture to cool for 10 minutes. In a food processor, blend flour, sugar, and butter until it resembles coarse breadcrumbs. Transfer the mixture to a bowl and mix in the cooled coconut mixture.
  • 1. Pour the velvety custard into a 6cm deep, 8-cup ovenproof dish. Layer the banana slices on top, ensuring they fully cover the custard. Sprinkle the delicious crumble over the bananas.
  • Preheat the grill to medium heat. Grill the crumble for 10 minutes or until the topping is golden. Finish by drizzling with cream before serving.
