Grilled Banana Boats

Elevate outdoor dessert with fresh and fruity twist on s'mores.
Ingredients:
  • 6 ripe firm large bananas, unpeeled
  • 6 tablespoons chocolate chips
  • 6 tablespoons miniature marshmallows
  • 2 tablespoons chopped pecans
Instructions:
  • Prepare 6 large sheets of heavy-duty foil. Preheat grill or oven to 350°F.
  • Make a deep lengthwise cut along the inside curve of each banana with a sharp knife, ensuring not to cut all the way through. Open the slit to create a pocket, then shape a sheet of foil around each banana to form boats.
  • With each banana, stuff 2 tablespoons of chocolate chips, 2 tablespoons of marshmallows, and about 1/2 heaping teaspoon of chopped pecans into the pocket.
  • Wrap each banana back in its foil boat, ensuring to leave about 2 to 3 inches of space at the top to allow for expansion. Grill over medium heat with the lid closed for 8 to 10 minutes until the marshmallows soften. Alternatively, bake in the oven for 15 to 20 minutes until the marshmallows reach the desired consistency. For a fun twist, you can also cook them in the campfire coals.
