Create a flavorful fish dish with a twist of bananas.
Ingredients:
  • 18.20 gm olive oil
  • 4 x 150g firm white fish fillets (see note)
  • 2 medium bananas, finely chopped
  • 1 medium mango, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 62.50 ml finely chopped fresh coriander leaves
  • 21.00 gm lime juice
  • Mixed salad leaves, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add fish and cook for 3 to 4 minutes on each side until fully cooked.
  • In a medium bowl, mix together bananas, mangos, chili, coriander, and lime juice until well combined. Serve the fish with the salsa, mixed salad leaves, and lime wedges.
