Banana milkshake souffles - simple to make, magically fluffy.
Ingredients:
  • 10.00 gm unsalted butter, melted
  • 75g caster sugar
  • 1 banana
  • 21.00 gm lime juice
  • 20.00 ml dark rum (optional)
  • 3 eggwhites (at room temperature)
  • 10.40 gm shredded coconut, toasted, plus extra to serve
  • Pure icing sugar, to dust
Instructions:
  • Preheat the oven to 190C. Grease four 1/2 cup (125ml) ramekins with melted butter, then sprinkle with 2 tsp caster sugar, tapping out any extra. Arrange ramekins on a baking tray.
  • Blend the banana, lime juice, and rum (optional) in a food processor until creamy. Transfer the mixture to a large bowl and leave it aside.
  • Using your electric beaters, whisk the egg whites until soft peaks form. Slowly add the caster sugar and continue beating until stiff and glossy.
  • Incorporate the fluffy meringue into the banana mixture with a gentle folding motion.
  • Divide the mixture into ramekins, then gently run your finger around the inside edge to help the souffles rise. Sprinkle coconut on top and bake in the center of the oven for 12 minutes or until golden and puffed up.
  • Sprinkle icing sugar over the souffles and garnish with extra toasted coconut before serving.
