Blackberry and lime banana bread

Elevate your afternoon with delectable blackberry lime banana bread.
Ingredients:
  • 220g caster sugar
  • 300g self-raising flour
  • 125ml buttermilk
  • 150g melted butter
  • 2 Free Range Eggs
  • 2 mashed large ripe bananas
  • 150g blackberry
  • 2 tsp lime rind, finely grated
  • 75g blackberry
  • 20.00 gm caster sugar
  • 125g softened butter
  • 240g icing sugar mixture
Instructions:
  • Combine caster sugar and self-raising flour in a bowl to create the base for the banana bread.
  • In a medium bowl, vigorously whisk together buttermilk, melted butter, eggs, and 2 large mashed ripe bananas. Pour the mixture into the flour mixture and stir until fully combined.
  • Gently fold in frozen blackberries and finely grated lime zest.
  • Transfer the banana mixture into a prepared 10cm x 22cm loaf pan. Spread it evenly. Bake at 180C for 1 hour or until a skewer inserted in the center comes out clean. Allow it to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • In a saucepan over low heat, combine frozen blackberries and caster sugar. Stir and cook until the blackberries start to collapse, about 5 minutes.
  • Simmer for an additional 5 minutes until slightly thickened. Strain through a fine sieve. In a bowl, use an electric mixer to beat butter until very pale. Slowly add the icing sugar mixture, beating thoroughly after each addition.
  • Set aside a small portion of the blackberry puree. Mix the rest with the butter mixture and spread it on the cooled banana bread. Finish by drizzling the reserved puree on top.
