Delicious glazed scones packed with fresh blackberries and a touch of zesty lime.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Grated peel of 1 lime
  • 1 cup cold butter
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup fresh blackberries
  • 2 tablespoons whipping cream
  • 2 tablespoons sanding sugar or turbinado sugar (raw sugar)
  • 1/4 cup powdered sugar
  • 1 tablespoon lime juice
  • 1 teaspoon whipping cream
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with parchment paper.
  • Combine flour, granulated sugar, baking powder, baking soda, salt, and lime peel in a large bowl. Use a pastry blender or 2 knives to cut in butter until mixture is crumbly. Add buttermilk and vanilla, stirring until dough forms. Gently fold in blackberries, pressing slightly into the dough.
  • Divide the dough in half and place each portion on a cookie sheet. Flatten each half into a 6-inch round, then cut them into 6 wedges and gently separate them. Brush the wedges with 2 tablespoons of whipping cream and sprinkle the tops with sanding sugar.
  • Bake until light golden brown, for about 14 to 16 minutes, then cool for 5 to 10 minutes before serving.
  • In a small bowl, combine glaze ingredients and drizzle over warm scones before serving.
