Blackberry-Lime Mimosa

Festive red mimosa with lime and blackberries, great for holiday brunch or romantic breakfast.
Ingredients:
  • 1 cup blackberries
  • 0.5 cup white sugar
  • 1 medium lime, zested and juiced
  • 1 pinch saffron
  • 2 tablespoons white sugar
  • 2 tablespoons lime juice
  • 1 (750 milliliter) bottle chilled sparkling wine
  • 6 blackberries for garnish
  • 6 lime wedges
Instructions:
  • In a saucepan over medium heat, mix blackberries, water, sugar, lime zest, lime juice, and saffron. Boil and stir until sugar dissolves, approximately 3 minutes. Let the syrup cool completely, around 1 hour, before using.
  • Sprinkle 2 tablespoons of sugar on a saucer. Coat champagne glass rims with lime juice and dip in sugar for a sweet sugar rim.
  • Drizzle 1 tablespoon of syrup into each champagne glass, then fill with approximately 4 ounces of sparkling wine. Finish with a elegant garnish of a blackberry and lime wedge.
