Juicy sultanas add a tasty twist to this moist and delicious classic banana bread.
Ingredients:
  • 2.50 gm bicarbonate of soda
  • Pinch of salt
  • 110g caster sugar
  • 125g sultana
  • 250ml milk
  • 260.00 gm mashed banana (about 2 large ripe bananas)
Instructions:
  • Preheat the oven to 180°C and line a 23cm x 13cm loaf pan with non-stick baking paper, ensuring the base and sides are covered.
  • In a large bowl, sift together flour, bicarbonate of soda, salt, and cinnamon. Add sugar and sultanas, then mix well.
  • In a spacious jug, mix together eggs, milk, and bananas. Use a fork to whisk until fully combined. Gently fold the egg mixture into the dry ingredients using a large metal spoon, stirring until well incorporated.
  • Transfer the batter into the greased loaf pan and bake for 40-45 minutes, or until a skewer inserted in the middle emerges clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Enjoy sliced and served lightly buttered or toasted.
