Delicious and quick banana muffins - perfect for busy mornings!
Ingredients:
  • 1 x 400g packet Traditional English Tea Cake mix
  • 80g softened butter, chopped
  • 80ml milk
  • 195.00 gm mashed banana (about 2 medium ripe bananas)
  • 42.50 gm sultanas
  • 20.00 gm melted butter
Instructions:
  • Preheat oven to 200°C (180°C fan forced) and prepare 12 muffin tins with paper cases.
  • In the large bowl of an electric mixer, combine packet cake mix (set aside cinnamon sachet), eggs, butter, and milk. Mix on low speed until ingredients are just combined, then increase to medium speed and beat for 2 minutes.
  • Combine the banana and sultanas thoroughly. Distribute the mixture evenly in the muffin pans, filling each three-quarters full. Bake for 18-20 minutes until golden and fully cooked.
  • Once the muffins are out of the oven and still warm, generously brush the tops with melted butter and generously sprinkle with the cinnamon topping sachet.
